GLOUCESTERSHIRE ECHO Drizzled with a sticky sweet soy glaze and lightly-spiced mayonnaise, the outer layer is crisp with the centre slightly oozing...We have barely tucked in and more food is arriving. By the boatload. Literally. Move aside conveyor belt, the chef's sushi selection is displayed on a miniature lacquered sea vessel. There is also sushi presented on a wooden bridge. Attention to detail is faultless – it almost looks too beautiful to eat.

SO GLOS Considered to be one of the best sushi restaurants for miles around, KIBOUsushi is small but always busy. To keep up with the constant demand, its chefs must be quick with a knife and have an excellent knowledge of fish, raw foods and how flavours blend in one bite; to create mini works of art it’s almost a shame to eat.

HONEY BOURNE LINE Our waiter highly recommended the Tempura Volcano Roll from the specials board. This is sushi (with salmon and avocado) which then gets tempura’d. Kingsley was in heaven! He loved the crispy tempura coating and the sticky sauce – he didn’t even describe it as ‘nice’ which is his usual helpful word for me when I’m writing my blog posts. He actually said it was one of the best tasting meals he’d ever had. I had a mouthful to test for myself – minus the salmon – and it was pretty good to be fair, to echo what Kingsley said, it was the sticky sauce that did it for me.
LUCIENNE SIMPSON A variety platter - Jo Moriawase (£14.25) - is a good way to try a few types of sushi without committing to one particular roll. Our 12 pieces comprised of 4 slices of sashimi (2 salmon and 2 tuna), 4 nigiri (squid, prawn, salmon and tuna), and 4 California rolls (I'm pretty sure the menu said eel, though my photo looks more like seabass). Pickled ginger, sachets of wasabi and soy sauce accompany all of KIBOU's take out sushi too.
BRITE RECRUITMENT KIBOUsushi is a place we would definitely visit again in the future!! To any Sushi lovers in Cheltenham… if you haven’t already… you need to visit Kibou soon!!
COOK EN ROUTE As always, the sushi was excellent. I didn’t go for a ramen on this visit, but I look forward to returning soon to try one from the menu or the specials board (the spicy minced pork ramen advertised at the time of our visit sounded really good).
FOOD FIT FOR FELIX Refreshingly friendly and attentive service, stunningly delicious Japanese cuisine and a cosy, boutique atmosphere – KIBOU leaves me thinking one thing: How have I not been here before!
